Drop Cookies
Cut back on the sugar in these butter cookies by using a nonnutritive sweetener.
Ingredients
2 cups cake flour
1 tsp baking powder
1/4 tsp salt
1/3 cup softened unsalted butter
1/3 cup low-fat milk
1/4 cup egg substitute
1 tsp vanilla extract
2-1/2 tbsp granulated fructose or 1-1/4 tbsp sugar substitute
Directions
Preheat oven to 375°F. Grease a large baking sheet with nonstick cooking spray or line with a silicone baking mat.
In a large bowl, sift the cake flour, baking powder, and salt together twice.
In a separate bowl, beat together the butter, milk, egg substitute, vanilla, and fructose or sugar substitute. Combine the wet ingredients into the dry ingredients and mix thoroughly.
Drop cookies onto the baking sheet by the teaspoonful and bake for 20 minutes or until a toothpick inserted in the center of a cookie comes out clean.
Makes 50 cookies
Each cookie contains approximately 29 calories, 1 g fat, 0.5 g saturated fat, 3 mg cholesterol, 32 mg sodium, 4 g carbohydrate, and 0.7 g protein.
