Brussels Sprouts with Mushroom Sauce

A perfect dressing for a perfect party vegetable. Brussels sprouts can be substituted with broccoli, turnips, kale or another favorite veggie. Serve over chicken or other protein, eat as a side dish, or try it as a healthy mid-afternoon snack. 

Serves 4

Brussels Sprouts with Mushroom Sauce Ingredients

  • 1 lb. Brussels sprouts or broccoli, cabbage, kale, collards or turnips
  • 1 c. chicken broth, low sodium
  • 2 t lemon juice
  • 2 t spicy brown mustard
  • 1 t dried thyme
  • 1 c. sliced mushrooms

Directions

Trim the sprouts and cut in half. Steam until tender, about 6 to 10 minutes. Or microwave on high for 3 to 4 minutes

Irish Beef Stew Ingredients

  • 1¼ pounds of top round beef cut into bite-size pieces
  • 3 c. of low-fat, low-sodium beef broth
  • 4 medium russet potatoes, peeled and cut into chunks
  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and cut into bite-size pieces
  • 1 T fresh rosemary, chopped
  • 1 leek, chopped
  • 1 medium onion, chopped
  • 1 T extra-virgin olive oil
  • Salt and pepper to taste

  • 1 19-ounce can chickpeas (also called garbanzo beans)
  • 1 red pepper
  • 1 cucumber
  • 2 stalks celery
  • 1 c. halved grape tomatoes
  • Juice of 1 large lemon (about 1/4 cup)
  • 1 T white vinegar
  • 2 T olive oil
  • 1/2 c. chopped fresh parsley

Marinade

  • 1/4 c. low-sodium soy sauce
  • 1/4 c. honey
  • 1 t minced garlic
  • 1 t minced fresh ginger
  • 1 t toasted sesame seeds

  • 1 boneless chicken breast (8 to 10 ounces)
  • 3 oz. fresh shiitake mushrooms
  • 6 c. mixed baby lettuce greens
  • 2 mangoes, peeled, pitted, and cut into thin slices

Cherry Nut Bark

The possibilities for making chocolate bark are endless. Try this variation, or swap out the ingredients for dark chocolate, dried cranberries and almonds. 

Serves 6

Cherry Nut Bark Ingredients

  • 4 oz. bittersweet chocolate
  • 1/4 c dried cherries, chopped
  • 1/4 c pecans, chopped

Directions

Put a piece of waxed paper on a 6-inch plate. Chop chocolate and place in a microwavable dish. Microwave on high for about a minute. Chocolate might not look melted, but it will be. Stir. Spread chocolate on waxed paper. Top with cherries and pecans and press in. Refrigerate. When cool, cut into 6 pieces.
