Postpartum - Virtual Parent Support Group

A free virtual postpartum support and discussion group available for postpartum parents with babies under 12 months of age. The group meets the second and fourth Tuesday of the month from 10 to 11 am. Participants will be required to complete a waiver. Mexican Bean Salad

Serve this as a meal or as a side dish on Taco Tuesdays. 

(Serves 4)

Ingredients

  • 1 16 oz. can black beans
  • 1 16 oz. can kidney beans
  • 1 16 oz. can white or pinto beans
  • 1 16 oz. can corn
  • 1 red pepper, chopped
  • 1 yellow or green pepper, chopped
  • 1 red onion, chopped
  • 1/2 c. olive oil
  • 1/2 c. balsamic vinegar
  • 1 T lemon juice
  • 2 T sugar
  • 1 clove garlic, chopped
  • 1/2 T chili powder
  • 1/2 T cumin
  • 1/4 c. fresh cilantro, chopped
  • 1 dash hot pepper sauce, if desired
