Slow Cooker Onion Soup

Top the soup with a toasted piece of your favorite bread. This recipe was a winner in our Simply Slow Cookin' contest. Congratulations to Rene Loiselle, Respiratory Services, UMass Memorial - HealthAlliance Hospital, Leominster, MA 

Serves 8

Ingredients

  • 3 lbs. onions, sliced
  • 2 T butter
  • 2 T olive oil
  • Salt and pepper
  • 8 c. beef broth
  • 2 T balsamic vinegar

Directions

Place sliced onions, olive oil, butter, a bit of salt and a healthy amount of black pepper into the slow cooker and cook on low for 8 hours or overnight. Add beef broth and balsamic vinegar and cook on low an additional 4 to 6 hours.

Green Mango Salad

Serves 4

Ingredients

  • 2 firm green mangos, peeled and julienned
  • 1 cucumber, peeled and julienned
  • 1 small daikon, peeled and julienned
  • 2 shallots, thinly sliced
  • 1/4 c. cherry tomatoes, quartered
  • 1 c. shrimp, cooked and roughly chopped
  • 1 lime, juiced
  • 3 T fish sauce
  • 1 clove of garlic
  • 2 Thai chilis, sliced
  • Cilantro
  • Thai basil
  • Mint
  • Chopped peanuts

Directions

Combine mangos, cucumber, daikon, shallots, tomatoes and shrimp into a large salad bowl. In a separate bowl, combine lime juice and fish sauce. Add garlic and chilis to bowl and crush in the sauce. Add finely chopped cilantro, Thai basil and mint to the salad...

An egg substitute and fat-free cheeses make these eggplant Parmesan sandwiches healthy and delicious. 

Serves 4

Eggplant Parmesan Sandwich Ingredients

  • 4 eggplant slices, each 3/4 inch thick
  • 1/4 c. no-cholesterol egg substitute
  • 1/3 c. dry breadcrumbs
  • 2 T grated fat-free Parmesan cheese
  • Vegetable cooking spray
  • 4 oz. fat-free mozzarella cheese, sliced
  • 2 roasted red peppers, cut into halves
  • 4 Italian rolls or hoagie buns, toasted
  • 2 c. tomato pasta sauce
