Peach Berry Crisp

Juicy peaches, bold blueberries and a golden oat-walnut crumble — this Peach Berry Crisp is summer in a spoon. Sweet, tangy and irresistibly warm.

Peach Berry Crisp Ingredients

(Serves 4)

  • 4 peaches, peeled and sliced
  • 1 c. blueberries
  • 1 t lemon juice
  • 2 T granulated sugar
  • 1 t ground ginger
  • 2 T walnuts, finely chopped
  • 1/4 c. quick oats
  • 1/4 c. flour
  • 1/2 c. brown sugar, lightly packed
  • 1 T unsalted butter

Directions

Arrange fruit in 8-inch baking dish. Sprinkle with lemon juice, sugar, and ginger. In a medium bowl, measure dry ingredients and cut in margarine until crumbly. Spread over fruit in baking dish, lifting fruit gently so crumbs coat evenly. Bake at 375 F for about 30 minutes or until fruit bubbles and topping is browned. Cool slightly.

Amount per serving: 300 calories, 62 g carbohydrates, 3 g protein, 6 g fat, 8 mg sodium and 4 g fiber
