Carrot Slaw

Bright, crunchy carrot slaw with sweet, tart fruit and a tangy vinaigrette, an easy side for tacos or sandwiches. Get the simple recipe.

Carrot Slaw Ingredients

  • 1 c. grated carrots (about five medium carrots)
  • 1/4 c. raisins or dried cranberries
  • 1/8 c. vinaigrette dressing
  • 1/4 c. walnuts or almonds, optional
  • 1 T green onions, minced chives, or ½ tablespoon minced onion

Directions

Wash and peel the carrots. Shred the carrots with a box grater or cheese grater. Add all of the ingredients above with the carrots and mix until combined. Carrot slaw is ready to eat immediately or can be refrigerated. Serve with sandwiches, tacos or as a side dish. Carrot slaw will stay fresh for up to a week in your refrigerator.
